Progress on mittens?
Zero.
But I did make cheesy squash.
(That's acorn squash stuffed with rice, pecans, ground pork, mozarella, and sage. Yum.)
But tonight? MITTENS!

Cheesy squash looks great; wonderful use of time! Hope to see you soon. Victoria
Well of course you had to fortify yourself for knittin' mittens.
That looks wonderful. Is there a recipe that can be shared?
Thanks, ladies! Allison, the recipe looks something like this:
roast halved acorn squashes (scoop out the seeds first!) in the oven until they are tender (30-45 minutesish?) I put the cut side down on a baking sheet that has a bit of oil on it.
When they are done, pull them out and scoop out the yummy stuff.
In a separate pan, cook up whatever seems like it would be tasty with squash. Vegetarian could stick with onions and herbs, I added some ground pork because I like it. When it's almost done, I added some chopped fresh sage.
Mix that stuff with some cooked rice (i used white, but I think wild rice would be really good!)and the scooped out squash. At this point I added some grated mozarella.
Put this mixture back into the squash shells. (hulls? husks? what the heck do you call those things?) Top with cheese if you are feeling cheesy. Bake until warm through and melty on top.
Tada! Sorry I can't be more precise! lol
